4th of July dessert idea: pie cookies

Are you hosting 4th of July this year? If so, this yummy dessert will not only be festive, but it will also be a crowd pleaser!

Hello Sweet Fruity Goodness

This recipe has been a favorite of mine for awhile now! I found it a couple years ago on Pinterest and immediately saved it to my cook book. These cookies are the perfect mix of gooey, fruity goodness. If you like blueberry or cherry pie then you will absolutely love these.


These cookies would be good as a stand alone dessert, or the perfect addition to a 4th of July themed charcuterie board.


Blueberry & Cherry Pie Cookies


Ingredients

  • 1 box of refrigerated Pie Crust - I used Pillsbury 2 pack. (2 boxes if you choose to make both blueberry and cherry flavors).

  • ¾ cup of any flavor pie filling. (I used blueberry and cherry Lucky Leaf filling).

  • 1 cup decorative sugar

  • 1 egg for egg wash

  • 3" round cookie cutter

  • parchment paper


Directions

All instructions below is for making one flavor of cookie. Double the instructions if making multiple flavors.

  • Unroll both crusts onto parchment paper. Then spread pie filling on one of the crust.

  • Cut the other crust into 18 even strips.

  • Place 9 of the strips on the pie filled crust. Peel back every other strip and add the other 9 strips one at a time. Weave them as you go to form a lattice top.


  • Brush the lattice topped crust with egg wash. To make your egg wash mix the 1 egg and 1 tsp of water together.

  • Add generous amount of decorative sugar.

  • Use the cookie cutter to cut out your cookies. If you don't have a circle cookie cutter a cup will work.

  • Place the cookies on a cookie sheet with parchment paper and bake them at 350 degrees for approx., 20-25 minutes (keep and eye on them. You only want them golden).

  • Take them out and let them cool. Enjoy :)
