Hello Sweet Fruity Goodness
This recipe has been a favorite of mine for awhile now! I found it a couple years ago on Pinterest and immediately saved it to my cook book. These cookies are the perfect mix of gooey, fruity goodness. If you like blueberry or cherry pie then you will absolutely love these.
These cookies would be good as a stand alone dessert, or the perfect addition to a 4th of July themed charcuterie board.
Blueberry & Cherry Pie Cookies
1 box of refrigerated Pie Crust - I used Pillsbury 2 pack. (2 boxes if you choose to make both blueberry and cherry flavors).
¾ cup of any flavor pie filling. (I used blueberry and cherry Lucky Leaf filling).
1 cup decorative sugar
1 egg for egg wash
3" round cookie cutter
All instructions below is for making one flavor of cookie. Double the instructions if making multiple flavors.
Unroll both crusts onto parchment paper. Then spread pie filling on one of the crust.
Cut the other crust into 18 even strips.
Place 9 of the strips on the pie filled crust. Peel back every other strip and add the other 9 strips one at a time. Weave them as you go to form a lattice top.
