Mediterranean Baked Sweet Potatoes

I'll begin this post by saying that cooking is not something I normally excel at, but with that being said it is something I’m definitely working on. This year I wanted to push myself to try new things and expand my horizons. That meant pushing myself to start cooking and actually learning my way around the kitchen. Thankfully I've been very lucky to have a husband that is a great cook, otherwise I would probably only eat cereal, take out, and anything microwavable. As well as learning how to cook, I am pushing myself to live a healthier lifestyle which means less pizza, chips, carbs, and salts. So naturally the first thing I did was get on Pinterest to find some healthy recipes. That is when I came across a Mediterranean Baked Sweet Potatoes Recipe by Minimalist Baker and thought it looked yummy. So follow along as I give this recipe and my cooking skills a try.

Quick Instuctions:

Step 1: Cut the sweet potatoes in half in order to reduce the cooking time- simple enough. No one warned me how hard it would be to cut a sweet potato in half! It took me almost 20 minutes to get them cut haha (newbie probs).

Step 2: Season and roast the chick peas. Believe it or not, I've never actually had a chick peas.

Step 3: Mix the garlic herb sauce. It was yummy. But I personally added more lemon juice because it had a little bit more hereby taste for my liking.

Step 4: Mix the parsley-tomato salad for garnish.

That's it! This meal can be used for lunch or dinner and only takes 30 minutes from start to finish.

Practice makes progress and I'm happy to say the meal turned out great! I love that this dish had so many different flavors between it being sweet, smokey, and zesty! Mediterranean Baked Sweet Potatoes

Simple 30 minute meal. This meal is fresh, healthy, vegan, and gluten-free. I've also linked the original recipe here (a video is included)

Serves: 4


  • 4 medium (~1/3 lb each) sweet potatoes*

  • 1 15-ounce can chickpeas (rinsed and drained)

  • 1/2 Tbsp olive oil

  • 1/2 tsp each cumin, coriander, cinnamon, smoked (or regular) paprika

  • 1 pinch sea salt or lemon juice (optional)

Garlic Herb Sauce

  • 1/4 cup hummus (or tahini)

  • 1/2 medium lemon, juiced (1/2 lemon yields ~1 Tbsp juice)

  • 3/4 - 1 tsp dried dill (or sub 2-3 tsp fresh per 3/4-1 tsp dried)

  • 3 cloves garlic, minced (3 cloves yield ~1 1/2 Tbsp or 9 g)

  • Water or unsweetened almond milk (to thin) {I used water}

  • Sea salt to taste

Toppings: optional

  • 1/4 cup cherry tomatoes (diced)

  • 1/4 cup chopped parsley (minced)

  • 2 Tbsp lemon juice


  1. Preheat oven to 400 degrees F and line a large baking sheet with foil.

  2. Rinse and scrub potatoes and cut in half length wise.

  3. Toss rinsed and drained chickpeas with olive oil and spices and place on a foil-lined baking sheet.

  4. Rub the sweet potatoes with a bit of olive oil and place face down on the same baking sheet (or another baking sheet depending on size).

  5. While the sweet potatoes and chickpeas are roasting, prepare your sauce by adding all ingredients to a mixing bowl and whisking to combine, only adding enough water to almond milk to thin so it’s pourable.

  6. Taste and adjust seasonings as needed. Add more garlic for more zing, salt for savoriness, lemon juice for freshness, and dill for a more intense herb flavor.

  7. Prepare the parsley-tomato topping by tossing tomato and parsley with lemon juice and setting aside to marinate.

  8. Once sweet potatoes are fork tender and the chickpeas are golden brown - roughly 25 minutes - remove from oven.

  9. For serving, flip potatoes flesh-side up and smash down the insides a little bit. Then top with chickpeas, sauce and parsley-tomato garnish. Serve immediately.

  10. Additional side ideas might include Hummus, and Pita Chips. Enjoy!


*Adjust number of sweet potatoes per person, and buy organic when possible for best quality and flavor. *Slice into quarters instead of halves to speed cooking time if on the larger side.
